Any Linux distributions exist that can install updates when left unattended?

I know some do security updates, however, the ones that require reboot will wait for the server operator to manually reboot it, otherwise, you would risk the loss of information.

For the "can" I'd say "all of them". They might not have "installed by default" or "optional package" for it, but they have framework that will do the work once the admin adds "proper incantations".

Thanks.

I normally use Linux Mint, but yes I just noticed Ubuntu has an option for "automatic download and install of Security updates" in the GUI for "Software and updates" under the "updates" tab.

Very glad to see the following happen (via soon to be released Linux Mint 19):

https://www.linuxmint.com/rel_tara_mate_whatsnew.php

In the past automatic updates were reserved to advanced users. It was assumed that if somebody was experienced enough to set a cron job, they would be experienced enough to parse APT logs and work around regressions. Thanks to Timeshift, which makes it easy for anyone to work around regressions by restoring snapshots, automatic updates can now be enabled easily, in the preferences.
