I finally took the plunge and got an LCD - a Samsung 730b.

To my eyes, the text looks crappy. Really crappy compared to a CRT.

I'm wondering - would a DVI cable help the sharpness at all?
Currently I'm using an analog cable.

Or is this just the way LCD technology is right now?

 
Are you running at native resolution? Does the "atuo" setting button help? In my experience the DVI connection doesn't help out all that much for 17" LCDs, but its worth a try.
 
I'm running at the native resolution of 1280 X 1024.
I tried auto settings and thing have improved a little, but
still too fuzzy.

Was hoping the DVI would help.

You mean it doesn't help for text, or for anything?
 
I'm getting stuttering in my flight simulation games.
No ghosting, and good frame rates, but the ground beneath me
stutters as I fly over it. Weird.

Maybe I'll learn to love this thing.
 
DVI will probably solve it. To me everything looks blurry on a CRT after having used an LCD for a couple of years... Text is definately much sharper and better. Try enabling cleartype. I don't use it but some like it. To activate it go to: right click on desktop -> properties -> appearance -> effects and click "use the following method to smooth edges of screen fonts" and select cleartype.
