Here's what I have:
Thermaltake Matrix Mid Tower
Asus x1950XTX 256
2GB (2x1) Corsair 800 4-4-4-12
Corsair HX620
2x Segate 320GB 7200.10
DVDRW
Floppy/7 in 1 USB Reader
Acer 24in WS monitor

Because of a shipping problem (some vendor said they had the CPU in stock when they didn't), I haven't ordered the cpu/mobo yet. I will be getting:
Conroe 6600
Asus P5W DH Deluxe

Because of the delay, I can basically afford to chuck a couple extra bucks at it. Should I get a CPU cooler (I might do a little overclocking, but Im not a big fan, play some games, video editing, photoshop stuff, some .net programming)? If so, these are the ones offered by the place Im getting the cpu/mobo. http://www.antaresdigital.com/customer/home.php?cat=320 Would the Thermaltake Typhoon 5 in 1 fit in my case? Is there something on this page that's a better deal?

Second, would it make much of a difference to throw a couple of $65 Seagate 160GB SATA (8MB, 7200.10) drives and use them in RAID 0 for the OS and put all the apps and data on the other SATA's I already have?

Anything else Im missing that looks like a need?

That's a good PSU choice if you wanted to support low end DX10 SLi/CF or Quad-CF. But if you just want a single DX10 card in the future or will be sticking with that GPU, a HX520W would suffice. No point in really RAIDing the drives, it won't help your performance too much.
 
raid 0 for desktop use does not provide tangible benefit.

definitely use aftermarket cooler with heatpipe if you want to play with overclocking and maintaining noise level at low.
stock is good for stock clocks.

tt typhoon is very good but for that price point i suggest to look into the scythe ninja, scythe infinity or thermalright equivalent.
