I have noticed that many laptops, even the one's with 15" screens and Nvidia 2go video cards can only support a resolution of 1024x768. While a higher resolution can be set, the desktop the not display entirely. Is there a way around this?

No. A laptop's panel has a discreet and fixed number of elements making up the picture. Increasing the resolution beyond this would be futile as information would be lost. One can however, scale a lower resolution up to fit.
