If at all possible go for the ibm centrino, you can add ram later. Quality reliability and support are well worth it.
 
Though the decreased performance will probably not affect your mom's usage, the lower battery life of the Celeron M might be a sticking point. Tom's Hardware did a review with a 1.4 P-M and a 1.3 Celeron M and the Pentium had an hour more battery life in the same notebook (see this for a more in-depth analysis).
