Apparently this Kickstarter was a scam, since they suspended it. Bummer.

Importation of Kobe beef is extremely limited. Prior to last August it was banned. Their actual ability to get it is almost none as 99.9% of actual Kobe beef is accounted for by highend/ultra highend steak houses.

Making jerky out of good beef is like making burger out of prime grade steak. Every time I see that on Triple D on Food network, I wanna reach into the TV and choke the cook.

Exactly, Kobe is world-renowned for it's taste, texture, and marbling. Intentionally drying it out will make a fine jerky but what's the point? The price point of any retail product would probably scare off most folks anyway..

Has anyone here actually eaten real Kobe beef? I have. I ate it in in the Kansai region near Kobe not too long ago and it was soooooo soft. I felt like I was eating wet paper. Not worth the reputation.

Because you want tasty, well-marbled, jerky that isn't as tough as shoe leather?

That's usually my objection to most jerky that I've tried so wagyu jerky actually sounds pretty good to me...

I don't think you want marbling with your jerky as fat will not dry out and can become rancid. Most jerky is made with round steak, flank steak, etc. not for the price but because it's very lean and most fat can be cut off; it has very little marbling.

I've made jerky before out of chuck roast as well and it came out very good. I make jerky every few weeks, I prefer it over store bought but still occasionally buy some of the jerky that some smaller local places make.
