I don't see why you think it was ok look at her e-mail. You couldn't wait the 2 days before Valentine's Day? You're not supposed to know your present beforehand.

I told her what to get for me, she told me what to get for her, then I get something else that she doesn't know about on top of that. I guess we're just too practical for the "REal World..."

Just because she knew what you wanted doesn't mean it was ok to check up on her gift to you imo. Maybe it's just me, but if I got someone a gift and they went snooping before it was time to give it, I'd be a bit upset.
