I read that in Kitchen Confidential. A hilarious and wonderful book.

I'm just not a fan of Global though. Obviously Anthony knows exponentially more than I do, but I just don't like the feel.

From my experience, you really don't need a whole knife set. 80% of it will never be used. Instead by 2 or 3 good knives.

/agree

I've only ever used 3 knives -- chef's knife for preparing meat (mainly skinning fish), paring knife for fruit/veggies, and a utility knife for generic stuff. for those three knives that I use all the time, it's worth spending decent money on them. but in a full knife set, I'd get a bunch of crap that I'd never use (cleaver, boning knife, bread knife, steak knives, etc, etc)

Damn, either there's some gimmick I'm not seeing or that's an outstanding deal. Having two chef's knives is great.

I just picked up a set. Not sure they'll replace my Wusthof knives, but too hard to pass up.
