Knife set, pots and pans (Wusthof All-Clad?)

So, It's coming closer and closer to our wedding date. And we decided to leave 2 big things off our registry for a couple of reasons. 1) We didn't make up our minds. 2) We knew they were cheaper online.

So here we go... I am looking to drop $300-400 on the knives and $400-550 on the pots and pans. Or some split of that. I reasearched Wusthof which seems to be the brand of choice with most retailers as high end. I am aware though that there are other knives in the same price range that may be better. I told my fiancee that I want these items to last us well into our lives so we don't have to replace them. The pots especially.

The knife set - we want 6 steak knives and + the standard 8 (Kitchen shears, paring, chef etc.)

The pans - We did our research here and we are set on open stock All-Clad, the stainless steel with an aluminum core that doesn't interact with food. If there is something better than all-clad that we can get 8-10pc. let me know.

I need input from the knife enthusiasts as well the pot and pan entuhusiasts. What are some good sites and reputable dealers
 
Most knife enthusiasts will tell you to take a look at some japanese knives. They generally have harder steel than german knives which allows for a thinner, sharper blade. The blade will also be able to go for longer periods of time without sharpening. A great place to go to look at japanese knives is.

The Tojiro DP series is generally considered the best bang for the buck if you are looking for a stainless knife. If you don't mind a high carbon knife, the Hiromoto series is very good as well. If you are willing to spend more than you see for the Tojiro DP, the only thing you'll really notice is higher fit and finish.

Edit: To be honest though, I picked up a Dexter Chinese Cleaver for $20 and it's the only knife I use. I use it for everything. If that type of thing interested you, you could get a nice Chinese Cleaver, a pairing knife, a bread knife, and steak knives and you'd be all set.
 
My wife and I ended up with Wusthof knives and All-Clad pans. She is very happy with both of them (she was used to cheap non-stick pots and pans and cheap Chicago Cutlery knives) however I've never used either so I'm not able to give you much insight. All in all, not a very helpful post.
 
FYI, if you're paying for these things, you can get them significantly discounted, brand-new, on eBay. I bought a nice, brand-new set of Wusthof Classic knives there for roughly half of retail, and they are almost never discounted meaningfully at retail stores.

You are right. However, I was wondering are there other brands I should be looking at since we all know that what Macys, Crate and Barrel etc. carry are what people know and they are not always what is best.
 
We have Wustof and All-Clad. But then my wife became a Pampered Chef consultant and now we have all that stuff because it's really great too.

knives set are a waste of money. you dont need brand name forged steak knives, and you certainly wouldnt need 8 of them at any given time.

buy a 8/10" chefs knife, and a 4" parer, and then stock up on bread knives and boning knives and etc as needed

i have a set of Messermeister... hand forged in Solingen germany... which wusthof USED to be .. now some of their is made in mexico or spain. messermeister are also cut to a sharper angle than the standard german knives... less so than japanese knives. theyre also harder than most german knives, but less than japanese knives. the harder they are the more brittle they are. theyre a good balance for me.

i bought a knife set when i went off to college, i only used 2-3 of them on a regular basis: bread knife, chef and utility. my collection of knives has increased through items I needed: cleaver, boning knife, paring knives (3 sizes), and a long slicer. The most important thing is this: if it's not comfortable, dont buy it.


cooking set, same thing. you would wind up using 2-3 of them out of whatever is included. It would depend on what you cook.

knives may be small, but unused pots just waste room.

Yeah, I'm entertaining the idea of just doing all open stock knives and pots.
