Kitchen Knives.. Global vs. Wusthof.

Got a 3 piece global set for my birthday, however I don't feel like i like the belly of the blade much because it wont allow for as easy of rocking as the wusthof. On the flipside is the Global that much better of a blade that its worth keeping. Really it comes down to the chefs knife in this kit...

both blades are of high quality (or they should be) its just because a japanese blade's cutting edge is less curved so you wont get as much rolling action...wusthof actually makes a jap. style....just use the kind that feels best for you

Wusthof, Global, and Henckels (Not Henckels Int'l) make great knives.

The cooking magazines I read recommend them in the order of Wusthof, Henckels, Global.
Many don't care for the grip or balance of the Global as much as they do Wusthof. If you can return them and get that instead I'd do it.

I swear by my Wusthof, I think Henckels are kinda getting worse. Never handled a Global, however they just look like they are balanced poorly.

both blades are high quality. since you prefer the wusthofs feel...

Quite the contrary, Globals have amazing balance.

I was amazed the first time I picked one up. Very light, very very well balanced. The G5 vegetable knife was made for my hand. The G2 chef's knife I picked up to accompany it, and they both see frequent service.

All three are great brands. But with knives, it's often personal preference more than anything when you're comparing high quality blades.

I told my wife that I needed a new set of kitchen knives (ie. something around $100 that don't bend when I cut something) She then proceed to go out and buy me a butcherblock 18 piece set of Proffesional Henckels to the tune of $479 :Q The store had to order it in and made her promise 3 times that she was gonna buy them when they arrived.
