I didn't overclock it per se, but I did run 2 x 512MB Kingston PC2700 CAS2.5 at Turbo CAS2 on my Epox 8K3A+. Timings all set to the fastest that the BIOS offered. No failures in Prime95 etc...

I can't wait to see what they are capable of when I plop them into my 8RDA+ on Thursday.

it depends on what chips that are on them
some people had terrble luck oc'ing their RAM and some have reached up to 217MHz(434DDR)
Look for the ones using the Winbond BH-5 and BH-6.
I have Kingston with Winbond CH-6 chips....but can't oc it yet

My Kingston sticks have Infineon chips. I do not plan to o/c to high fsb, I will take the system to DDR333 again (once I get my 8RDA+) and start raising the multiplier. I'm sure the Kingston will do well for me in this regard.

I've got 2x256Mb of Kingston PC2700, and they've been nothing but good! I've run them at 2-2-2-5 at times, but now am running at more relaxed timing of 2.5-3-3-6. They've passed 24 hour Prime95 and 12 hour Memtest runs more than once!

One stick has "Kingston" marked chips, the other is "Nanya".

I've been surprised and delighted at the performance of this memory.

ALso, I'm a little confused on the dual channel setup for the nforce2 (I will be using an EpoX 8RDA+). Do I need two sticks of ram to get max performance or is it okay if I just use one?

In most cases there is negligible performance increase from using the dual DDR feature. But specviewperf tests show a nice improvement when dual DDR is used.

basically no performace gain with 2 sticks of ram in a nforce board unless you use integrated video.
