Looks like it has a 5.1 coax output between the keyboard and serial port. You'll obviously need a coax cord, but I recommend getting a regular old RG6 coax (like what you'd use to hook up cable tv) and a few "F" to phono plug adapters instead of buying a Monster "digital" coax cable for $30+. You can get the parts at Radio Shack. No soldering/crimping/cutting required.
SPDIF output is digital, and your Z640s only accept an analog signal. As far as I know, the only way to use your Z640s in 5.1 mode is to have some kind of receiver between them and the motherboard that would decode the digital signal.
