I just sold my unlocked, 64GB Nexus 6.

How do I, step by step, clear all my information off the phone? (I've never had to do this before).

When I do that, will that process leave the apps that I downloaded on the phone?

It will be like it was when it came out of the box (plus whatever OS updates were installed along the way). All apps and personal data go away. Your installed apps are tied to your Google Play account, not your phone.

And yes, you need to remove your SIM unless you are also transferring the line of service.

If you're just getting a new phone then you need that SIM to put into your new phone.

Encrypt phone, and flash a factory image.
"Restoring to factory default" doesn't permanently delete your data.
