Just made my first batch of 3 Alarm Chili

started it at 1:30 PM in my crock pot and finished at 11:00 PM when I got home from work.

The whole place smells of chili goodness.

It tastes so nice because its cold and snowing outside.

for those interested, here's my first time recipe:

1 lbs of stewing beef, cut up small
2 cans of Primo Hot & Spicy Pasta Sauce
2 cans of Kidney beans, drained
1 large green pepper, diced
1 large onion, diced
5 cloves of garlic, minced
4 ounces or so of Chili powder
1/4 cup of Cholula Hot Sauce
1 table spoon of sugar
1 tea spoon of Italian Spice

I then mashed up some of the beans when I got home tonight and that helped thicken it up some more.

Sounds tasty Woode. What made you go with pasta sauce out of curiosity? I find that there's too much "italian-ness" in it for my taste. Nice to see you went thick tho and didn't do tomato juice or V8.

well, most of the recipes called for tomatoes and/or tomato paste.

I happened to have 2 cans of sauce and I figured that would give me both tomatoes and spiciness.

Mashing some of the beans allows it to thicken.
 
Excellent. Although I hate to cook, I've had an urge lately to utilize my crock pot for chili and pulled pork. I guess it is pretty easy, just throw it all in and let it sit, right? I think I'll give your recipe a whirl.
 
Not bad, although I'd say use diced tomatoes and tomato paste. It will keep it fairly thick. I'd also at least go with pablanos instead of green peppers.

its pretty straight forward. Remember, I have a 6L crock pot and this filled it up about 85%.

And that was nearly 10 hours of slow cooking.

i've never tried chili in my crock pot. definitely something i want to do.

not to sound like a broken record, but to repeat Triumph's question, do you just throw it all in and let it cook? what setting do you put your crock pot on? do you have to add the ingredients in any specific order?

You just put it on low and mix it around a bit before you start. There really isn't anything in chili that should be put in in any certain order.

chili as a dish originated from the poor areas of san antonio, where they would often use beans as a filler because they couldn't afford all the meat. therefore it is perfectly acceptable for chili to have beans, except in certain competitions.

It's just the seasonings that are involved. Tomato paste is just concentrated tomato. Tomato sauce is seasoned. In the case of chili, not with seasonings you'd usually use. And the peppers are just so meh 😉 Go spicey!

He's probably looking for something more like this:

1 lbs of stewing beef, cut up small (I usually use ground beef)
2 cans diced tomatoes
1 can tomato paste (6oz)
2 cans of Kidney beans, drained
1 can of white corn, drained
3-5 pablano or hotter peppers
1 large onion, diced
5 cloves of garlic, minced
2 tbs ground chayanne pepper
2 tsp sea salt
2 tsp ground black pepper
1 tbs ground cumin
2 tbs chili powder

Yours, but a little modified 😉

I've been wanting to try using cocoa powder as well. I've seen it in a few recipes.

*edit* forgot the chili powder 🙂

2. I didn't have them, so I used Cholula Hot Sauce

3. I used what was at hand.
