Because professors are as aware as anyone that you are not going to remember and need 90% of what you ever learn, and what is important is that amongst a class of your peers, you did better than they did.

The facts and stuff you remember from a book will only be so useful, and if they are ever needed for real, they can be learned/relearned. What will be useful is people knowing that amongst people who are already considered to be smart, you are smarter than they are.
You learn what you need to REALLY learn on the job.
