Just cooked red beans and rice

This is soooo good!

To make, you will need:
  • 1 lb of dried red kidney beans (soaked overnight)
    andouille sausage
    chicken stock
    green bell pepper
    celery
    onion
    garlic
    cayenne
    bay leaves
    salt and black pepper

Chop up your pepper, celery, onion, and garlic. Soak your dry red kidney beans overnight, then drain. Put them in a heavy pot and pour in your chicken stock. It should just cover the beans, if needed you can add water at any point (don't walk away and let all of your liquid dry up or it will ruin it. add more if need be). Bring it to a boil. Toss in your veggies and bay leaves, then turn the heat down to a simmer. Slice up your sausage (I do mine a mix of half circles and quarter circles, but you can slice it however you like). Heat up a skillet to like med high and saute them, not to actually cook them but to give the outsides of them some nice searing. Toss them in. With the lid cracked, cook for a while. Throw in your cayenne and salt and pepper to taste. Cook till done. Serve over white rice with some french bread on the side.

Tomorrow I will have rice and beans for lunch. Ridiculously good place that has it and their guac is made on site with some chunks of (i hope) avocado in it.

Yeah. Easy as hell to cook and pretty good too. Nothing beats homemade though.
 
Forgive the noobish question (I can't cook for shit) but when you say the kidney beans are soaked overnight, does that mean soaked in water? Or is there some other solution to soak them in?

Yes, soaked in water.
 
I also add smoked ham,thyme, worcestershire sauce and pickled onions cooked down to look like a lumpy cream sauce. Chopped Italian parsleys sprinkled over the top at serving. Steamed long grain white rice and good supply of beer. Mindnumbing goodness.
