Just bought a tablet

Depends on how you will use the tablet. There are no universal apps everybody needs.

This, need to know what you're going to use it for.

On my main tablet, my most important apps are YouTube(preinstalled on the N7), Comixology, B&N Nook, Netflix, and the XDA app.

i got it too, but I had a reason.

Mostly its good for games and movies.
I also use it at school for email and BlackBoard. I may consider loading maps and using it for navigation, but I'd need a big mounting bracket for the car.

Try out customization apps since you're new to Android. First you want to learn what launchers are. Popular launchers are Nova launcher, Apex launcher, Action launcher, etc. You can make your device look and behave whatever you want it to. (You can even make your device look like a TouchWiz device, lol) Most of them offer free versions that are very capable, especially for new users.
