Just bought a new smoker in prep for Thanksgiving

My old one was a Brinkmann I originally bought about 8 years ago...still did the job but was a charcoal one and occasionally had trouble with it if it was really cold outside. Just bought this bad boy and I must say I'm impressed. Put it together and fired it up...have it seasoning now....cut some dead limbs off my apple tree to help the seasoning process and it smells great in my back yard right now...making me hungry!!!

All three of our dogs are sitting downwind of it sniffing the air......I can only imagine what their reaction will be when there's a ham and turkey inside it.

That's good stuff....sadly my wife won't let me deep fry one....she worked in the ER for a while and saw too many people come in burned by them. Of course those people were idiots.....but she still throws a fit every time I start to buy a turkey fryer....

I think the standard is you deep fry it for 8 minutes per pound....not sure of the oil temp though

I have a smoker... I've wanted a frier for a few years... decisions decisions...

Red - I've cooked a bunch this way. Search online you'll find a lot of good ideas about rubs, spices, injections, etc.

As far as cooking it goes my experience tells me 5 minutes per pound plus 5 minutes. Have a good meat thermometer to check the internal breast and thigh temps. Should be about 170- 180 when done. Oil temp 350 - 375. Keep an eye on it. It it's getting too brown . . . pull it and check it.

Don't try to fry one bigger than 10-12 lbs. Minutes/per pound cooking time decreases as the bird gets smaller.

Shiner - where does the wood go in that bad boy? How do you like the gas?

There's a wood box just above the burner and just under the water bowl. Works great....I had a hard time trying to decide between gas & electric, I knew I didn't want another charcoal one, but after reading a lot of reviews it seemed most people preferred the gas over the electric. So far so good....
 
I have a brinkman smoker. It makes the absolute best jerky ever.
There is no topping the jerky from a natural wood smoker.

I've heard a couple of guys I work call a smoker a "hot box" but they were yankees so I generally ignore them. The only thing I call a hot box is my wife.

Those are supposed to be nice.....sadly the only ones I could find around here like that were $300+
