They tell them when they can / can't challenge and also clue them in on a whole host of stuff.

They tell them when they can / can't challenge and also clue them in on a whole host of stuff.
That is different than advising them their actions will result in a penalty. Imagine a team is set on the line of scrimmage and the ref notices they are using an illegal formation. Would you find it acceptable for them to notify the team before they snapped the ball to save them from being penalized?

because a ref coming onto the field to tell the team they are lined up illegally is exactly the same as the official standing by the coach off the field talking the entire time.
