I may be able to offer some insight. I spent 30 years working for corporate food service as Chef and Manager. First, you can throw logic and good business practice out the window. Corporate is interested in one thing and one thing only, they don't care what you do as long as the metrics are met so that they get their quarterly bonuses.
Talking to the folks at the top is a waste of time. The short term news is good in that once the corporate powers that be know they've got someone they can work like a dog, they will continue to do so. All the while haranguing you for doing a miserable job but, they won't fire you.
So, the decision you have to make is whether you will put up with the bullshit for a good paycheck or, will you take a significant cut in pay and tell corporate food service to go fuck themselves. I did and am very glad I decided to leave.
