Shouldn't he say "I could eat chicken for every meal of the day and sometimes do". How could you eat chicken every day, but sometimes do??

Sports radio talk show host. he calls his listeners clones and when a caller has a good rant about something his famous quote is "rack em"

 
I could buy a car, and sometimes do (buy a car). The part in parenthesis is implied. There is nothing illogical about that sentence. It isn't the best possible grammar, but it does get the point across accurately. And that is the whole point of grammar - to get the point across accurately.

Your suggested sentence is NOT what he was trying to say. He was trying to say he could eat it at least once every day. Every meal of the day is much more severe than at least one meal a day.
 
Rome is the biggest tool/jock-sniffer associated with sports right now. I have more pity for his willing listeners tho.

You left out the long, undramatic pauses.

Other than that, yes his quote makes no sense.
