I have a lot of the same problems. My eyes just don't open wide enough, especially in the mornings, and I have a really tough time getting my contacts in as a result. It's gotten to the point where I've had to spend an hour just to get a pair in. One such time was during my trip out west. I was at Arches, and I woke up at dawn to take pictures. When I got to The Organ and The Courthouse I felt compelled to view this beautiful sunrise with my own two eyes. I didn't want my glasses getting in the way. So I tried putting in my contacts. They just wouldn't go in. An hour later, I'm sitting in my car about to cry because I had missed the sunrise that I had so desperately wanted to see, I had missed the time when I could take the best pictures, and I was seriously about to rip my skin apart in an effort to make my eyes open wider. I wish my eyes weren't so screwed up
To get your eyes accustomed to being touched, start training yourself to ignore the must-blink reflex. Look up and touch the whites of your eyes with your fingers. Just get used to touching your eyes, and you'll eventually feel fine.
