I was wondering if any Japanese speakers could explain which of these would be most useful for a trip to Tokyo?

I don't know the difference between kana/ kanji / etc and I wonder which would be practical?

LingvoSoft Suite 2006 English <-> Japanese Kana for Windows
LingvoSoft Suite 2007 English <-> Japanese Kana Romaji for Windows
LingvoSoft Suite 2007 English <-> Japanese Kanji Romaji for Windows

Kanji is chinese characters
Kata(Kana) is another alphabet for foreign or scientific words
romaji is to speak japanese using the alphabet

I would look at the ones that say romaji.
