I like have several different updates of J2SE Runtime Enviorment 5.0 updates.

Do I heed all of these or can I remove them?
 
I usually remove all except the latest update. Previous updates can sometimes have security vulnerabilities, and malicious websites can call up specific (vulnerable) versions of the JRE to exploit those flaws if you leave them installed.
 
Ok...I can safely remove all of the versions of J2SE Runtime Environment 5.0 since

I have J2SE Runtime Environment 6.0 installed?
 
The only reason to keep older versions of the JRE around is for development purposes, but for most users, the latest version is all you need.
