Buying expensive presents is boring, IMO. If she really wants a camera, it might be an OK gift but in my experience women tend to like thoughtful gifts better than expensive ones. Last Christmas I got my girl a copy of Mike Doughty's (ex-frontman of Soul Coughing, her favorite band) latest CD and tried to get him to sign it. I couldn't get it signed before Christmas so the next time he was in Minneapolis for a show I got tickets and got him to sign it there.

well people don't get 2mpix because its optimal but because they settle on it as what they are willing to spend or can afford, or simply don'tknow any better. 2megapixels isn't good enough for good large prints, and even small prints don't have quite the clarity. you don't have a pixel budget to crop at all... its far less then optimal if your taking pictures you want to keep. it certainly doesn't get even near 35mm.

i would take another route.

spend more on dinner, $40 gets you.... not much... i mean, 15% tip on $40 would be $6, tax is another $3, so thats close to $10, leaving only $30 for two dinners + appetizers and drinks?

go with roses instead of balloons, she can dry them and save them. a dozen roses at safeway is $10, just deliver them yourself. surprise her. and girls ALWAYS tell other girls about how many roses their bf got them.

anniversary card - $3, this is a MUST. spend some time, and write something heartfelt in it. she'd probly enjoy this more than any gift.

your anniversary is suppose to be a celebration of the time you have spent together, so dont worry about the gift too much. its not her birthday.

if you're set on getting a camera, do what everyone else has suggested, get a nice 2MP one. odds are, she wont know the difference.
