I've become a grilling fool, but I need a new, excellent marinade for my chicken and steaks...

...any ideas? I've been using some of the store-bought marinades, so I'm open to recommendations in that area if you've used them.

But if there are any great recipes you got, I'll take 'em as well! Thanks! :) MMMM.... STEAK! :p <--Salivating

Get some steaks from Costco (if you live on the westcoast, not sure if its on the east), put the steaks in a zip lock bag and pour A1 steak sauce into it and marinate overnight.

Then when you grill them the next day, grill them with REAL BUTTER and salt and pepper! damn i can't wait for the summer when my grilling frequency increases.

Wrap Corn in foil and put those on the grill...

Mashed potates, gravey

In my opinion, there really isn't a need to marinade steak. However, some teryaki and soy sauce with garlic would be great for either type of meat. I brine pork chops before cooking in a mixture of water, brown sugar, vinegar, salt, garlic, and liquid smoke. Make enough to completely cover the chops. Let them sit for an hour or two, turing them once during the process.

Try this one I made yesterday. I dont use measurements, so I'll just tell ya ingredients:

Red wine
Garlic
Pepper
Soy Sauce
Worcestshire Sauce (less than soy sauce)
Sugar
Lime juice/vinegar

Red wine is optional. I have no idea how much I put in, just based on feeling. Dont overdo the lime juice and garlic.

Bon apetit.

That sounds delicious, I love Worcestshire Sauce.

STUBBS.

They have his marinade here in FL ... I've seen it at Win-Dixie and Publix.

It's a picture of an African American guy, I guess his name is Stubbs. It is the best marinade EVER!!!

If you're grilling t-bone's, soak for exactly 3 minutes in 1 qt lemon juice while forking furiously. Baste in real melted butter, and grill over soaked hickory chips. The lemon tenderizes it and the butter absorbs the hickory flavor. Best steak I've ever had. Works for chicken too, but I soak in lemon longer to get a little bit of the citris flavor.

For cheaper cuts, I soak in beer, worchestershire, and BBQ sauce or A1 for about 24-48 hours then grill. That's pretty good too.

Do you mean, perforating the meat? Forking...

Well you could perforate it with any number of things, but yes that was the intended idea. :)

stubb's is a BBQ joint here in downtown austin... awesome BBQ and the marinade rules the school!

best thing at stubb's is the sunday gospel brunch... reservations required, $14 all you can eat BBQ and breakfast... and theres a gospel choir singing on the stage! soooo goood.

another good one is jerk seasoning. though i wouldn't try it on steaks its great on chicken. mccormick's has a pre-blended one and you either rub or follow the instructions on the little bottle for wet
