It's that time again - Chili

Being without power all week has me craving some chili. It's cold enough outside to make the first batch of the year.

I'll update this post with pics/recipe once I get started. Until then, discuss away. Let's skip the beans vs. no beans argument though...

You can use the gas stove to make electricity?

Yeah dude. Boil a pot of water and run it through a turbine attached to an alternator. These are things most people have, especially alternator-sized things.

I definitely went overboard with ingredients. I didn't use all the peppers, onions, and garlic, but the ratio of meat+vegetables vs. liquid was still poor. I might try to add some liquid after it cooks for a while. I got both cans of tomatoes in, but no chicken or beef stock

Weres the chile beans and the Kidney beans , That does look good . But without Chili beans Dried and Kidney beans dried it just isn't chili

AS AN ALTERNATIVE TO BEAN CHILI.......



You can make my moms calico bean dish and then have the best of both worlds.


1/2 lb raw bacon cut into 1/2 - 1-inch pieces
1 lb ground beef
1/2 cup chopped onion
1/2 cup ketchup
1/2 cup packed brown sugar
1 tsp mustard
2 tsp white vinegar
1/2 tsp salt
16 oz pork and beans
16 oz butter beans OR great northern beans (I use butter beans)
16 oz kidney beans undrained
flour to thicken (optional) (I never use)

Preheat over to 325 degrees. Cook bacon until crisp. Save bacon grease.
Put bacon aside. Brown hamburger and onion in bacon grease.
Drain. Mix in 3 quart casserole. Bake undercovered 45 minutes to 1 hour.
Serves 8.

Notes:
Do NOT microwave to create this dish since it's the baking action that gives
this dish it's wonderful flavor.

Okay to cut the raw bacon in larger pieces and then break into smaller pieces
once cooked.

I know in previous threads people liked bottom round instead of ground beef but I tried it and wasn't a fan. Sausage is perfect

and for fucks sake chili does not have beans!

i'm making some chili for a football party we are having. actually I'm making 2 batches. one hot as i can make it and the other mild for the pussies.

My batch was pretty hot. The jalapenos plus a lot of cayenne and it was perfect. Right at the cusp of very hot but not unnecessarily painful. I still want to find something unique though. I still can't find the depth of flavor as really great chili. I should try chocolate, that seems popular.
