I hate the bastardized versions of sushi in the US ... try to find an authentic place where they use red vinegar in the rice, which gives it a distinct flavor and color - the way real sushi is made

Go to a good sushi place, look at the explanations of the rolls, pick a cool sounding roll.

Get a good spread of sashimi, most places have sashimi dinners for 2 people, or 3, 4, etc.

Just be adventurous & follow the flow of the place's menu.

If I don't just go Omakase (had to look that up) I'll definitely try uni and toro. The rest is up in the air. About an hour to go! Mmmm sushi.

The way real sushi is made...you mean with seasoned rice vinegar with variations depending on the region.

woooo I did omakase for the first time few months ago. Had more or less the same problem: would always order tuna, yellowtail, copius amount of salmon, some mackeral, and maybe a few other things

the sushi chef gave us i think 9 rounds, and all but 1 were absolutely fabulous. Things that i would have definitely not tried otherwise. Omakase's great because the chef is supposed to give you what THEY think is the best that night, taking things like the freshness/quality of the fishes into consideration

Omg if anyone is in the Dallas metro area, go to Fujiyama in Carrollton. It's the best sushi place in the states, and I've been to 80+ places. Get the 'stars' roll : Crab, Salmon, Roe, Tuna, Sauce, etc .. outstanding.

Order 'white tuna' :)

While it's more expensive, I prefer Nigiri and Sashimi over the rolls. Order some cuts and be sure to eat them first to get the full flavor of the fish.

I also like Spicy Tuna rolls with beer.....especially the ones that have japanese mayonaise on them. There are quite a few different ways to make Spicy Tuna. The last time I ordered it, it tasted like devilled crab because it was mixed up and put inside the roll. Some sushi chefs just make a tuna roll and put the hot sauce and mayo on top of the rolls.(the way I like it best)

We were hungry so we also ordered 3 rolls, but we told the chef to choose his favorite 3 for us. SO GOOD!!! I guess this would be a mini-omakase. I don't even know what those rolls were but they were hands down the best I've ever had. One had asparagus in it, I remember that.

Next time I go in I'm going full blown omakase.

Sadly, that place we went to did not have uni, so I couldn't try it. :( They don't buy it because they say they can't get the quality they want.
