I had the day off on Monday, so I smoked a medium size prime rib. It was delicious with baked yam, baked potato with sour cream and chives and corn.
This afternoon, when I got home from work, I was scrounging around the kitchen looking for something to make for dinner. I cubed the remaining beef, made some fresh salsa with green onions, tomatoes, cilantro, a squeeze of lime and 6 large jalapenos. Lastly, I heated up some refried beans I made from scratch last week.
I heated up extra large size tortillas on the griddle, slathered beans on them, sprinkled on grated extra sharp cheddar cheese, dropped on adequate amounts of cubed prime rib and ladeled on fresh salsa. The near side of the torrilla is folded over the filling, the ends are wrapped up and over to keep anything from falling out and then it is rolled.
You just gotta love leftovers!
