Is using the stock cpu cooler ok?

I have all the parts for my computer but there was a problem with the shipping for the cpu cooler. That is fix now but I have to wait till Tuesday to get it could I use the stock cpu cooler till Tuesday and if I do when I put the new one on do I have to doing anything like clean the the processor of thermal paste
 
Most stock coolers are OK - not that great, but perfectly serviceable.

If you get a better aftermarket cooler, it's usually a simple operation to replace it (unless it's one of those which requires you to take out the motherboard from the case and reinstall it afterwards).

Stock coolers usually come with thermal grease, some of the cheapest ones use just a thermal pad. Prying it off should not be a problem, as long as you're careful. The residue can be usually cleaned with isopropyl alcohol (90% and above), using a coffee filter (this may sound strange, but it doesn't leave lint behind).
 
Yes and yes. There wouldn't be a stock cooler if it wasn't adequate, you will just need to clean off the stock paste when replacing it with another unit.
