Is this sufficient to record me playing piano with my tablet?

There are at least a 50 zillion alternatives.

Does your piano have any electronic outputs or is it all old skool? What's that tablet? And what's the price range?
 
That's something only you can answer. Perhaps something like a Blue Snowball iCE? They're still cheap yet have fairly good recording quality.
