T-bird 900(overclocked I hope)
a couple case fans
3 IDE Hard Drives
1 DVD Drive
1 CDRW
.....

Will the Sparkle FSP300-60BT power supply be ok?

Sure, should do the job just fine. Sparkle is a brand name of the Fortron/Source group, their site claims that the model you reference is Athlon-approved. Fire it up!
