If I wanted to record what was going on on my screen, like a game, is that possible, I need to be able to record 800x600 or higher, at a good high quality rate.

Capture the TV-Out via S-Video, that is the only budget way of doing it. What is it for?
If it is going to be for a DivX video then the S-Video cable will do you OK quality wise.
Is it for broacasting? Then a Scan converter and a DV or DVD recorder will probably be best but tht is $$$$
