I think somewhere in Sweden, the sun doesn't go down, it never touches the Horizon. That's only in... Winter or Summer though.

Certainly.

At the extremes of the hemispheres in their respective summers, at times the sun will just dip below the horizon.. and then start comming up again.

But if you mean see the sun in the east and in the west at the same time, I don't think that would be possible.. haha

There are places that you can see the sun rise and set from the same spot, but never at the same time.

Except maybe if you were on the same planet that they crashed on in Pitch Black - Multiple suns.:D

Edit : forgot about the poles, but it never really sets, it's just there all the time.

There are the so-called "white nights" - even in Sankt Petersburg - when there is never dark. Also, there are places on Earth where the day is about 6 months old (north pole, south pole).
But the only place where you could see the sun setting and rising at the same time is in high orbit (the atmosphere will induce a kind of "lens" effect, and you will see the sun on both sides of the Earth (or on all sides of the earth, I'm not sure).
I remember I saw somewhere such a picture taken from space.

I don't know if this satisfies your question, but I did see the sun rise on the Atlantic Ocean then watched the sunset on the Pacific side in one day.

The Boardwalk in Atlantic city. Flew home around noon. Had dinner at Ruby's Diner on Seal Beach pier (CA). Voila!
