Is there something I can do to get rid of a rodent without it stinking when it dies?

That's normal behavior for cats. To them it is a trophy of how good they are at hunting and killing. Don't read too much into it. Just toss the mouse parts in the trash and reward the kitty with a pat on the head.

My cat periodically will barf up piles of internal organs of some small creature or another that he caught and consumed onto the carpet. Or he'll bring in a 'toy' to play with without harming it (bird, mouse, lizard, etc).

I hate that. My job has a barn cat and we found him freaking out one of our customers by batting around a squirrel he had bashed pretty good jeez.
