Without downloading the firmware, hacking it, and then upgrading? Like anything like ziphone?

You can use QuickPWN with the iPod Touch 1G. The iPod Touch 2G is not currently hackable.

Just wondering - what is the purpose of "jailbreaking" an iPod touch? Are there applications that you can put on it that aren't available through the app store?

Yup, tons. Jailbreaking installs Installer.app and Cydia, two aftermarket installer programs that link up with repositories around the world. Everything from SSH to custom iPhone preference apps (like for disabling spelling correction) are available.

You already have the firmware. iTunes keeps a copy of it.

You may have to manually point it to the firmware file. You'll have to check and see where it's located on your specific OS.
