My experience tells me that apparently all job functions, potentially have their more and less, than perfectly honest/trustworthy workers.
As one gains experience, it makes it easier to make judgements, based on meeting a person for the first time.

Physicist is a good one for 'trustworthy' because A) inept people generally don't try and make a living in that kind of field and B) there is little to no way for them to lie for profit.

Even 'scientist' in general is hard to call trustworthy. The first thing that comes to mind would be those in the medical and particularly pharmaceutical fields. They might as well be Michael Jordan getting paid to endorse shoes. Or underpants.

Lots of research-oriented professions out there getting paid to 'prove' pre-selected results.

It's sad that it just doesn't really matter much anymore. If there's a chance for someone to fuck you, or simply just demonstrate gross incompetence...chances are, they will.

That’s a modest decline from 84% four years ago, the last time the Pew Research Center asked the public to rate various professions. But the military still tops the list of 10 occupational groups, followed closely by teachers, medical doctors, scientists and engineers. A solid majority of the public says each of those occupations contributes a lot to society.

I trust psychiatrists and psychologists, because they have a very difficult job to do, are usually very highly trained, and when a person needs to use them, one does not necessarily have a lot of options.

I have come across some advice, which says that it is best to find a really good one, if you especially need their services (this particularly applies to psychiatrists).
I don't think I have ever heard of one committing a crime, so that probably further shows their trustworthiness.

I guess if someone was seeing one (this particularly applies to psychiatrists), one probably needs to be a bit wary, as what they say, may be somewhat tailored to a persons issues.
 
Educators, followed closely by clergy (or whatever term best fits religious nutballs), then politicans, then CxO.

Dogs
 
I hate psychiatrists, but I would trust them a lot. They have a very specific job to do, and by and large they do it very well given what they have to work with. My personal experience is that years of talking almost solely to people with mental illnesses while at work has made them withdrawn, bitter, and cynical, but professionally they're very good.

Politicians.

I've seen dinosaur bones, fossils, biological cells under a microscope, and the wonderful range of plants and creatures, (apparently) evolution has brought to us, ALL with my OWN TWO EYES.

I would trust historians and biologists, as individuals.
But not all predictions/interpretations made my historians, are likely to be 100% correct, as they don't have that much old information, to digest.

I've never been to the moon, yet I still believe the moon exists.

I've never seen you (HamburgerBoy) with my own two eyes. Yet I believe you exist, so does that make me bad or something ?
