What I'm wondering is, if the SBS is running DHCP and the Linksys is acting as the Gateway, how's it going to work for people joining the network via VPN since the DHCP is on the other side?
Are you asking about how the "Showroom" PCs get an IP address assigned with DHCP? It looks like the Linksys gateway for that small network is creating a VPN tunnel to the VPN endpoint back at headquarters. Because this appears appears physically connected to the headquarters network the clients can request a DHCP IP assignment as normal.
