Is there a program to monitor which files are being viewed?

Is there a program that would monitor everything that is running so that lets say I open a program from "XYZ" company and it loads a series of libraries and reads the following registry entires, is there a program that can do this for me? I've got some programs I'd like to uninstall and to do so, I would like to see where it's keeping it's files so that I can remove them.
