Is there a chance my SATA and IDE channels are being overdriven

SATA ports 1,2 are sometimes unlocked, and SATA ports 3,4 are often locked -- so if you're overclocking and having problems, you should try using just the 3,4 ports.

Ok I'll try that. Any thoughts regarding the strange DVD drive behavior?

I'd suggest checking it again after (1) moving the SATA connections, (2) undoing the overclocking.

(2) is pretty critical for such diagnosis.

If it's still misbehaving, then you have to look elsewhere for the solution, perhaps even another DVD writer.
