Is the Denon AVR-S500BT 5.2 Channel a good receiver for this setup?

I'm considering getting Polk Monitor 65Ts (or 75Ts if you think they're a better buy), a Polk CS1, and a BIC F12 subwoofer. Then, at some point when I have more money, I would probably get the rear surround speakers, though I'm not sure which ones I should get.

Depending on the space you have you might look into the 55t as rear surrounds. I have a similar setup with the older (but very similar) Monitor 70 in front and Monitor 50 in rear and like it a lot. I personally much prefer a small tower in rear than a bookshelf or more traditional surround on a stand. I guess the first thing you need to figure out is where you will put the surrounds, and how that decision may or may not limit your choices.

I have them paired with an Onkyo AVR (606 maybe?) Velodyne Sub and CS2 center

No, it's not. No Audyssey = no buy. Unless you think you're really going to get 4K Blu-Ray soon - in which case you shouldn't be cheaping out on a low-end AVR! - last year's E300 is a better unit.

You might be able to find an E400 on sale for $299, which has a nice level of Audyssey plus 4K pass through.
