OK, here goes:
I want to build a backup server for my company. Now my question is: Is it possible with IDE harddisks, that you "hot-swap" them in a special enclosure? The server would have 1 system harddisk and 2 data harddisks. I would like to swap those harddisks each day, without rebooting the server. Would that be possible?

Yes, it's quite possible.

For instance:
Promise makes hot-swap capable ATA raid controllers and special drive cages to allow it.
 
OK, I read that it's possible with the "Swap-n-go" software but I didn't find anything on google about that particularly software. Can someone enlighten me?

No idea what swap-n-go software is. Probably just the management utils that come with the raid.
