Is switching from Windows Home Premium to Windows Enterprise an "upgrade?"

I mostly use my laptop for school and they give us the option of installing Windows 7 Enterprise through a Software Assurance contract through which they have a volume license.

Generally, would it be worth doing this for my remaining time at school?

Depends on how you use your system. Enterprise can use more RAM. It can use the language packs if you wanted to.

Enterprise is basically the Ultimate version sold under multiple Lic. deal.

I.e., Activation can be done locally by the cooperate server.

Chances are, If you've been getting along on home premium fine for this long, you don't need enterprise.

I probably wouldn't think twice of it, but I'm currently doing the Windows 8 consumer preview and I'm running thin on patience with this thing... Gotta switch back to some Windows 7, right?

Enterprise will let you join to a Domain, run Remote Desktop, and use Bitlocker hard drive encryption. Those are the main bullet points, beyond that, its pretty much the same as Home Premium.
