It's probably the world's oldest female profession, but I would think that fisherman is an older profession.

Profession implies payment. Fisherman as a profession would be someone caught fish and traded them in exchange for something. Otherwise it is not a profession, it is survival.

Women have been trading sex for food/shelter since the dawn of man.

Hunting isn't a profession unless you are selling or bartering your goods. The same with prostitution. I think prostitution being the oldest profession is based on the concept that goods-for-sex are the earliest known examples of bartering. But to suggest that making such transactions every once in a while makes you a "professional" is a bit of a stretch.

I'd imagine farmer/butcher would have to happen first.

I seen a science documentary where a female gorilla (or chimpanzee?) has sex with a male one in exchange for some bamboo. So its definitely the oldest of all professions.
