Right now,

AMD 4000+ @ 2.7ghz
2x512mb Corsair PC4400C25PT
Radeon X1800XT 512mb
Audigy2 ZS
74gb Raptor
250gb sata
DVD+RW
DVD/CD-RW Combo
Floppy

Replace some of those components with...
Intel E6600
2x1gb DDR2 800
Asus p5w-dh
8800GTX

Think my 510W PC Power & Cooling ATX psu will handle it? it's not the sli version...

PC Power and Cooling is the absolute best power supply company on the market. Their 510W model can handle pretty much anything with relative ease.

If you're worried about a PC P&C PSU (LOL, there's some P's, eh?) @510W on your system, I'm glad I moved up from my Antec TP 480W to a Corsair 520W.

I think you'll be just fine. You do mention that yours isn't the SLI version, but I don't see you listed two GTX's as a option. You'd be just fine with one. With two, ppl w/ownership will have to chime in.

I'm thinking about gettin a new OCZ GameXStream 700W SLI PSU... should I keep the PCP&C or get the OCZ? The cables aren't wrapped on my PSU now, makes it kinda ugly.

That would be a downgrade.

Which 510W is this? If it's a new one I'd say keep it. The OCZ GameXStream series, while very efficient, has great voltage regulation and is very attractively priced, is also known to have ripple/noise issues once you load it to 500W and beyond.
