"lab" is even considered a valid word in the board game Scrabble which does not permit abreviations. From The Official Scrabble Players Dictionary, 1991 edition:

n pl. -S a laboratory

unless you're talking about LAB colorspace. then it's L-A-B (like how you say RGB or CMYK)
