Is it unwise to not install security updates for IE even though I never use it?

Why wouldn't you install updates for it?
While you, yourself might not open IE, there are plenty of other things that use the IE engine...so, yes, install all updates that are for security issues.

It would be unwise, since all sorts of system components can use the Internet Explorer rendering engine to display stuff - for example, the "upgrade to Windows 10" thing is basically just a IE web page in a box.

Install the updates.

I had this same thought the other day, when I was reviewing at the live update notices to download and install. There was a large windows explorer 11 update. I even had to check what version of Explorer was on my system, as I never use it. Since the update said it was a critical update, I went ahead with the download and install.

I don't use IE much either and generally I am not a fan of updates. I still immediately install IE 11 with it's required "prerequisites" as a minimum starting point in win7 SP1 reinstalls as soon as internet is active; even before an A/V is installed. As I understand it this addresses many vulnerabilities at the OS level. So far this has not interfered with any other function.
