Only after you've flash freezed it. That's what normal restaurants use to kill the parasites in the meat (since cooking is not involved). I doubt you have a flash freezer as normal freezers do not go that low in temp.

I believe you can eat any dense meat fish raw.

Be careful though, some of that stuff has worms in it (especially swordfish), and they get chopped up into the fillets:

If it's something you or a friend caught, no. I know a guy who has been on salmon fishing crews (private and commercial) on the pacific and they do not eat any fish they catch raw due to parasites (worms).

However, if you get it at the store (or a sushi restaurant) it is always flash frozen.

Meh. 99.9% of the time, they're harmless. They're everywhere, you just don't see them.

The fillets are? The ones just sitting in the fridge at a grocery store?

Yes, "fresh" fish at the store or restaurant has been flash frozen. From what I understand it doesn't significantly alter the taste or texture.

I could be wrong but I'm pretty sure this is the case. Actually it might only be for salmon intended for sushi - fish intended to be eaten raw is usually flash frozen.

At any rate I wouldn't eat any fish that is actually fresh, even if I caught it.
