I'd like to be able to save documents like my credit report, bank statements, etc. without copy/paste into Word. Taking a "snapshot" isn't a solution because it only captures the immediate screen, and not what is further down on the page....any suggestions?

In internet explorer go to file , then save as. Then change the save as file type to Web archive single file(.mht). This will save all the data and images to one file that can be saved to your local disk. Then display later on by just clicking on the file in the location you saved it to.
