Is it possible to rip PCM audio tracks from DVD and LaserDisc?

The title pretty much says it all.

I have several concerts on LaserDisc and DVD that contain uncompressed PCM audio (stereo) tracks. I'd love to be able to get them onto the PC for encoding into MP3. My Hercules Fortissimo II sound card has an optical SPDIF input. Is it possible just to conncect the player(s) to the soundcard and rip the audio tracks? If so, what's some good software to use for it? I wanted to check before I start lugging equipment around the house.
